If you have an instant pot, a piece of salmon, some potatoes and 3 minutes, you can have a perfect dinner. Not joking!
To season the salmon, think herby, citrus or spicy notes, because it will steam on top of the potatoes and impart lucius unique flavors. I used “slap ya mama” Cajun seasoning for a blackened, spicy flavor. Which I paired with a refreshing mango salsa. But use what you got! Slices of lemon, or a heavy shake of Italian seasoning. Salmon is a very great versatile fatty fish and goes great with a variety of flavors.

Season salmon steaks generously.
Place chopped potatoes in the bottom of IP, top with pieces of butter and add broth.
Using insert trivet place both salmon steaks over potatoes.

Pressure cook for 3 minutes.
Use the valve release and release the pressure. Remove salmon.
Turn on sauté feature and using a large wooden spoon, or potato masher, once the potatoes start to sizzle, mash together. You can mash to your liking, either by leaving lumps or smooth.
Add spinach to potatoes and mix until spinach wilts.
Plate and Enjoy!!

Mango, red bell pepper, red onion, jalapeño, cilantro. Chop and combine. Drizzle with a mixture of honey, lime juice, garlic powder, and salt and pepper.
