Avo-Over-Toast with a perfectly poached egg

“Avo”, as the Australians fondly call avocado, pairs perfectly with a crispy piece of toast and a smooth runny poached egg.
Sprinkle with Trader Joe’s “Everything But the Bagel” seasoning and crushed red pepper for layers of flavor.

 2 Pieces of bread
 ½ Ripe avocado
 1 Egg
 3 tbsp White vinegar
 ToppingsRed pepper flakes, “Everything but the Bagel”, salt flakes, etc.

In a medium pot, or large skillet with high walls, bring about 4 coups of water to a boil.
Crack egg into a glass ramekin.

When water starts to boil add vinegar. Using a spatula, or large spoon, swirl the water clockwise. While water is still in motion, slowly dip ramekin into water and slowly tip egg out.
If the water doesn’t cover you egg, you can gently ladle hot water over the surface to cook it.
Cook for about 1 minute. The white should be firm, but the yolk still soft.
Gently remove egg from water onto a small plate.

Toast the bread.
Slice avocado. Using a couple pieces, smash avocado on one piece of toast, and place slices on the other.
Top the smashed avocado with poached egg.

Sprinkle generously with seasonings, serve along side your favorite breakfast beverage. Enjoy!
