
Cook the bacon either by throwing it into the oven or in a pan. Reserve a couple of tablespoons of bacon fat.
Slice the chicken breasts into more manageable pieces, either filleted or lengthwise. Remember that generally, the smaller the pieces, the faster they will cook.
Season with garlic powder and pepper, then coat in flour.
Add either the bacon fat (if ready) or olive oil to a heated pan, and cook the chicken for about 4-5min over medium-high heat. Once it's browned, take it out and set it aside.
Add the chicken broth, lemon juice, and butter to the pan, letting it bubble for about 3 minutes.
In the meantime, dice your bacon.
Add the cream, stirring as you do. Once it starts to bubble again, add the chicken and the diced bacon. Cook for another 5 minutes or so.
Serve over a bed of rice and/or alongside some greens for that nice healthy feeling.
