Super easy baked cod with lemon, olive oil, salt and paprika or cayenne pepper. This simple and healthy recipe is so easy and calls for 4 seasonings and takes only 5 minutes prep time. It’s a great dinner idea for those busy midweek meeting nights!

Preheat oven to 400F.
Arrange the cod pieces in a shallow glass dish/baking tray. Drizzle the olive oil onto the fish, followed by lemon juice, salt and cayenne pepper.
Bake the cod in the oven for 10 - 12 minutes, depending on the thickness of the cod. Garnish with parsley and serve immediately.
Serve with salad, boiled potatoes or rice.
