Beef + Mushroom Foil Packs

This recipe is the epitome of simple. You can take this to cook over a campfire, on a grill, in the oven or even in your IP. It’s a “set it and forget it” type of meal.
The creamy mushroom soup flavors weave through the various veggies, potato and beef. Its a very simplistic, hearty meal all wrapped up in a small individual foil package. This leaves a lot of options to altered and fancy or simplify.
The pack amounts, meat, veggies and potatoes can be altered depending on the amount needed or where you’re cooking.
Most roasting time will be about 45-60 minutes. If cooking in the IP, set the packs on the trivet and pressure cook for 30 minutes.
Change up the veggies with what you have on hand.

Recipe is for 4 packs.

 1 Cream of mushroom soupCream of chicken can be substituted
 1 Large onion, sliced
 ½ lb Mushrooms, quartered
 1 cup Green beans, rinsed and trimmed Carrots, zucchini, bell peppers, etc can be substituted. Cut into large chunks.
 4 New potatoes, sliced About 2-3 cups of any sliced potato can be substituted
 1 lb Ground beefTurkey can be substituted
 Salt and fresh ground pepper Cooking spray (for greasing foil)

Preheat oven to 375 degrees. Prepare a large cookie sheet.

Lay out a long piece of foil (this will vary, but start with 18”). Spray with oil.

Layer on center of foil, spoonful of soup, potato, ground beef, veggie, onions, more potatoes and topped with another spoonful of soup.

Wrap package by gathering to long sides together and rolling down. Fold in the sides.

Repeat 3 more times, with remaining veggies, beef and potatoes.

Place packs on cooking sheet and place in oven.
Roast for 45-60 minutes. Checking half way thru to see if the potatoes and meat are cooked through.

Serve in foil packs or serve in a bowls with toasted piece of bread and alongside a fresh green salad.
