Bethel Ginger Salad Dressing

From our Archives....an oldie but goodie Bethel recipe. Add some zing to your spring mix salad leaves. This makes 2 cups.

 ½ cup Small Yellow Onion, chopped fine
 1 Carrot, shredded
 2 tsp Fresh Ginger, shredded
 ¼ cup Soya Sauce
 2 ½ tsp Apple Cider Vinegar
 2 tsp Lime Juice
 3 tsp Honey
 ¾ cup Olive Oil

In a food processor or blender, add all the ingredients except the olive oil.

With the food processor or blender running, slowly pour in the olive oil. Mix until all the oil is incorporated.

Save in a glass jar until ready to use. Shake the jar before using to make sure the oil is well mixed in again.
