Schnitzel is piece of meat pounded down, breaded and quickly fried. This recipe uses the schnitzel as the foundation to a great sandwich.
Topped with fresh avocado, alfalfa sprouts, tomato, pickles, and cushioned between two soft, fresh slices of your favorite bread!
Pork, steak, even veal can be used in place of the chicken.

Prepare oil. In a heavy duty skillet, heat 1/4 cup of oil to med/high temp. Don’t allow it to get to hot while your prepping the chicken.
Prepare the chicken; Slice chicken breast Into two pieces through the center, like your opening a book.
With the thinner pieces, place between plastic wrap, or inside a large ziploc bag and pound with a mallet. You can also use a rolling pin or the back of an ice cream scoop. Pound meat piece into about 1/4 thickness.
Repeat with all chicken.
In a shallow dish, or empty pie pan whisk eggs with a couple tablespoons of water.
In a second shallow dish mix together panko bread crumbs, garlic, onion, herbs and salt.
Dredge each piece of chicken, first in egg wash and then completely cover with panko mix.
Carefully place chicken in hot oil. Cook 2-4 minutes per side. Allowing the crust to get golden brown.
Repeat with all pieces. Adding the rest of oil as level lowers.
The schnitzel is complete! You could make a meal with a side of veggies and mashed potatoes, or .....an awesome sandwich!

Toast bread slices. Slather with mayo and mustard. Layer chicken and the rest of the your favorite toppings, cheese, tomato, lettuce, avocado, sprouts, etc.
