Fire Island Carrots

Tender carrots steamed with a spicy, savory broth.

 1 lb Carrots, peeled and cut into even piecesBaby carrots can be substituted
 1 Celery stalk, diced
 1.50 cups Chicken broth
 1 Garlic clove, minced
 1 tsp ThymeRosemary, dill or oregano can be substituted
 1 tbsp Red wine vinegar
 ¼ tsp Crushed red pepper flakes
 2 tbsp Butter
  cup Parsley, finely chopped 2 tbsp dried parsley to substitute
 Salt to taste

In a medium saucepan, over med-high heat, simmer carrots, celery, chicken broth and garlic, until carrots are barely tender, about 10-15 minutes.

Add thyme, vinegar, and red pepper flakes and bring to a boil. Boil until liquid reduces to 1/2 cup.

Add butter, parsley and salt.
