Mexican Corn Salad

This dish can be made without necessarily having all the ingredients listed and yet still be excellent!

 1 bag of frozen cornif fresh is available, that is even better
 1 tbsp olive oil
 ½ red bell pepper, finely diced
 ½ red onion, finely diced
 6 green onions, sliced thinly
 ½ cup fresh cilantro, chopped
 1 jalapeno, diced
 ½ avocado, chopped
 4 tbsp lime juice, or to taste
 ½ tsp cumin
 ½ tsp paprika, or to taste
 ¼ tsp pepper, or to taste
 ¼ tsp salt, or to taste
 2 tbsp sour cream, or yogurt
 2 tbsp mayonnaise
 ½ cup feta cheese diced

Cook corn over high heat. Let it get some browning for flavor. Transfer it to a large bowl and let it cool for a couple of minutes.

Add the remaining ingredients. Stir everything until combined.
