When my husband and I came out of quarantine we had so much oatmeal leftover. He hates oatmeal and I only eat it on extremely cold days. So left over oatmeal, in one cup servings, was put in the freezer, eventually transferred to a bag in the freezer. This recipe calls for 1 cup of oatmeal. The ones with fruit in it works too. Steel cut, old fashioned, quick oats, it doesn’t matter it all works.

Mix all dry ingredients together in a large bowl. Preheat oven at 400 degrees electric oven. It the butter/shortening into the dry ingredients. I use my hands so I can feel the dough. It should feel soft and crumbly. Almost like a store bought dough mix.
Add the milk and mix. If there’s crumbles on the bottom of the bowl add more milk a bit at a time. Don’t over mix or knead. Once the dough comes together press out on a counter and press to desired thickness. They don’t rise much so I press to 3/4 inch very rough estimate. Use a glass to make round biscuits and place them on parchment/oiled baking sheet or just form the dough into a rectangle, cut them like sheet cake and put them in a 9x11 deep baking pan.
I also like using muffin tins, or mini loaf pans. Something my husband loves is putting a TBL of bacon grease in the bottom of the loaf pan with herbs and garlic. Or melted butter. When they come out you don’t even taste the oatmeal! Perfect for biscuits and gravy or butter and jam!
Also this only makes about 12 1inx1in biscuits. I double the recipe and get 12 mini loaves. Enjoy
