Roast Lemon and Tomato Salad

This roasted lemon and cherry tomato salad is the perfect side dish. Sweet tomatoes combine with a tangy vinaigrette and delicious roasted lemons.

 2 Lemons, thinly sliced and halved
 Boiling water
 ½ tsp Sugar
 Salt
 2 lbs Cherry Tomatoes, halved if large
 ½ Red Onion, thinly sliced
 ¼ cup Parsley, few sprigs fresh, chopped
 ¼ cup Basil, fresh leaves, torn if large
 Spring Mix (optional) If you'd like a green salad, add spring mix and double the dressing amount
Dressing
 1 tbsp Honey
 2 tsp Lemon juice (fresh)
 1 tbsp Olive Oil
 Salt and pepper (added to taste)

Preheat oven to 325° F and line a baking sheet with parchment paper.

Cover the lemon slices with boiling water and allow to sit for 2 minutes. Drain water from the lemon slices

Arrange the lemon slices on the baking sheet. Sprinkle them with sugar, salt, olive oil. Bake for 20 minutes and allow to cool.

Mix the rest of the salad ingredients in a bowl and add the lemon slices

Mix all dressing ingredients and pour over the salad.

Taste for seasoning and adjust as desired with additional salt and pepper. Serve immediately.
