
Boil chicken with water until cooked, but not dry.
Preheat oven to 375 degrees.
Mix cream of chicken, sour cream, jalapeno, olives, and half of the cheese together and spread some of it at the bottom of a 9 x 11 baking dish.
Fill the tortilla with filling and wrap like a burrito, then place them in the baking dish.
Spread the rest of the filling on the top and sprinkle rest of cheese.
Bake at 375 degrees until the cheese turns to a golden brown color.
*homemade cream of chicken;
1 tbsp flour
3 tbsp butter
1/2 cup chicken broth
1/2 cup milk
In medium pot, melt butter over medium heat. Whisk in flour to create a roux. Allow flour and butter to start to bubble. Slowly whisk in broth and milk. Bring soup to a low boil. Keep whisking until soup thickens. Season with salt and pepper.
