Spinach & strawberry salad with shallot & bacon dressing

Dress up fresh spinach with the tastes of sweet strawberries, tangy dressing, soft cheese, salty bacon and candied nuts. It hits all the taste buds!

 5 oz Fresh spinach leaves
 2 Bacon slices
 1 Shallot, thinly slicedCan be diced for a mild flavor
 ¼ cup White wine vinegar White vinegar or apple cider vinegar can be substituted
 2 tbsp Stone ground mustard Yellow mustard can be substituted
 1 tbsp Sugar
 3 tbsp Olive oil
 1 tbsp ThymeOr oregano can be substituted
 ¼ tsp Black pepper
 1 oz Goat cheese, crumbled Feta can be substituted
 ½ cup Strawberries, sliced Frozen can be substituted, just pat dry after defrosting
 ¼ cup Candied nuts, choppedWalnuts can be substituted

Pan fry bacon and reserve bacon fat, if using for shallots.
Crumble cooked bacon and set aside.

(Optional) For mild shallot flavor, cook briefly in bacon grease.

Mix together dressing ingredients; vinegar, mustard, sugar, thyme and pepper. Stir until sugar dissolves. Slowly whisk in oil. Add shallots. Set aside.

In large bowl, add spinach, strawberries, bacon and half of dressing. Gently fold together, allowing spinach to become completely covered in dressing. Add more dressing as needed.

To complete salad sprinkle on top, either when individually plated or in large serving dish, goat cheese and chopped candied nuts.

(For an extra-extra layer of flavor, top salad with sliced hard-boiled egg)
