A boring grilled turkey sandwich? No no no. This is a tasty grilled turkey melt, an exciting protein-filled snack.

Stir garlic, mayonnaise, sriracha, and lemon juice in a small bowl to combine. Season with salt. (This will be way more sriracha mayonnaise than you'll need for a single sandwich, so be ready to store the extra for future usage)
Start by heating up a pan to low-medium heat.
Take the bread slices and generously spread some sriracha mayo on the insides.
To one slice, add cheese and thinly sliced tomatoes.
To the other slice, add lettuce/spring mix and turkey.
Assemble the sandwich, and add half a tablespoon of butter to the heated pan.
Place the sandwich on the pan, and flatten with a small plate or another tool. Cook for 1 minute.
Remove the sandwich from the pan and add another half of a tablespoon of butter. Flip the sandwich and place back in the pan to grill the other half. Don't forget to flatten it down! Cook for 1 minute.
Remove from pan, slice the sandwich diagonally (make 2 cuts for bite-sized shareable snacks), plate it and enjoy!
