Try this vegan take on taco meat. It's all about the final texture, which is chewy and meaty.

Ahead of time, try to get as much water out of the tofu. Press or drain the blocks for a while. This isn't required, but if you don't do it you might need to cook the tofu more to cook off the water.
Heat oil in a large skillet over medium-high. Cook the onion and garlic a few minutes until soft.
Crumble the tofu into the pan. Cook, stirring (and maybe scraping) until tofu browns and reaches the texture you like. Depending on how much water is in the tofu still, this could be 20 minutes or up to an hour.
Add spices and cook another minute or so. Stir in vinegar and adjust salt and pepper to taste.
