Watermelon + Apple Salad

This salad comes together super fast and is delightfully refreshing. A treasure for these hot summer days.

To note: the fruit can be cut differently then pictured, try to make similar sized pieces with the apples and watermelon.

 8 cups Watermelon, sliced and cubed or into stick-shapesThis is about half of a large watermelon, if using whole watermelon simply double the rest of the ingredients
 2 Green apples, cored and sliced into similarly sized pieces
 3 Limes, zested and juicedAbout 1/8-1/4 cup of liquid
 2 tbsp Olive oil
 2 tbsp Lemongrass, finely mincedGinger could be substituted (use sparingly or to taste), or more lime zest can also be substituted
 ½ cup Cilantro leaves, roughly chopped
 ¼ cup Mint, roughly chopped
 1 pinch Kosher salt and fresh ground pepper
 1 tsp Black mustard seeds, optionalPoppy seeds can be substituted

In a small bowl, whisk together the dressing ingredients; lime, lime zest, lemongrass, olive oil and herbs.

In a large bowl, combine watermelon and apple pieces. Gently mix together with the dressing. Sprinkle black mustard seeds over the top and serve!
