Weeknight Cod

Recipe from Nansi's Pantry Meals (the pantrymeals IG account). This is a real winter comfort food dish - a yummy combination of sweet, savory and spicy.

 ½ Red Onion, thinly sliced
 1 Garlic clove, chopped
 ½ tsp Red Pepper Flakes (or more depending on your personal spice level)
 3 tbsp Water (or white wine if you have a bottle open)
 ½ cup Walnuts
 ¼ cup Raisins
 ¼ cup Olives
 2 Potatoes, thinly sliced
 1 ½ cups Cherry Tomatoes, cut in half lengthwise
 4 Cod, defrosted and seasoned with salt and pepper

On medium/medium high, in a large saucepan add 2 tablespoons of olive oil and add the sliced onion. Cook until onions soften and begin to change color.

Add garlic and red pepper flakes. Cook for 1 minute. Add walnuts, raisins, olives. Add the water (or white wine). Cook for about 4 minutes, stirring to prevent sticking.

Add the sliced potatoes, salt and pepper to taste. Stir and cook for 10 minutes.

Add the tomatoes, stir well. Cover pan. Cook for about 8 minutes

When the potatoes are almost cooked, add the 4 pieces of Cod. Nestle the fish in the sauce. Cover and cook for about 5 minutes. Carefully flip the Fish over. Cover and cook for a few more minutes.
