Celery, such a versatile vegetable! Can be eaten raw or cooked. Great in stir-frys, soups, dressing, or snacks. Think slathered in peanut butter or your favorite salad dressing.

Raw celery taste the best when it’s crunchy, but sometimes sitting in the fridge it get a bit wilted.

Pull apart the stalks, and rinse clean under cold water. Cut off very bottom of stalks (tends to rough) and also the leaves on top (leave them for second tip).

Cut celery into 4-5 inch pieces and store in a ziploc bag or bowl with cold water. A few ice cubes can be added to make the water really cold.

Since celery is mostly water, losing water makes it wilted and not crispy, but storing the stalks in water boost the hydration.

Celery leaves are great to eat! Add the clean leaves to salads, tuna salad or top your egg salad sandwich.

Celery leaves also lend a great flavor boost to broth. You can enrich the boxed chicken broth by simmering leaves with carrots, onion (unpeeled) and garlic (unpeeled) on low for an hour or so.
You can store the leaves in the freezer until ready to use in the broth.
