Galettes are a fun way to show some creativity and variety. Basically a pie with any filling you desire that takes minutes. These mini ones are a perfect sweet treat for that snow day, a quick dessert to bring to a gathering, or when you have that chocolate craving.

INGREDIENTS
1 oz box (3.5 oz) chocolate pudding (cook and serve)
1 cup milk
½ block cream cheese (room temp), cut into small chunks
1 box (141 oz) refrigerated pie crust (two crusts in box)
6 pecans (optional)
1 egg (lightly beaten)
powdered sugar, for garnish
DIRECTIONS
2In a small pot, add the pudding mix, milk and softened cream cheese. Heat the pudding and continually whisk until the pudding has gelled and thickened. Only takes a few minutes. Take off the heat and let slightly cool.
3Roll out the pie crusts, and cut into six 5-inch circles (a small bowl works great!). Spoon a couple of Tablespoons of pudding into the center of each pie circle, and sort of spread it out. Then fold the edges of the pie on itself, forming mini galettes.
4Brush each crust with the egg wash, and place a single pecan in the center of each galette. Bake for about 25 minutes, or until the crust edges are golden brown.
5Garnish with powdered sugar
6 Yields 6 mini galettes. Enjoy!
