This chorizo pasta recipe is quick, easy, and has only a handful of ingredients! It's ready in about 30 minutes.. This makes 4 servings.

INGREDIENTS
8 oz Pasta, any shape
½ tbsp Olive Oil
1 Chorizo (pantry package defrosted) or 8oz Chorizo sausage cut into small pieces
1 Onion, medium size, chopped finely
3 Garlic cloves, minced
14 oz Tomatoes (from the can, either diced or crushed)
1 tsp Italian seasoning
3 Baby Spinach, handfuls
½ cup Heavy Cream or Half n Half
Salt and pepper to taste
Parmesan cheese (optional)
DIRECTIONS
1Boil a large, salted pot of water for the pasta. Cook it until al dente according to package directions.
2In a skillet over medium-high heat, add the olive oil and chorizo and fry it until it starts to get crispy (around 7 minutes). Drain the chorizo fat.
3Add the onion and cook it until it's softened (about 5 minutes).
4Stir in the garlic, tomatoes, Italian seasoning and cream. Let the sauce cook for another 5 minutes or so, or until the sauce is reduced to your liking. Add the spinach if using and allow it to wilt in the heat of the sauce.
Taste and season with salt and pepper as needed.
5Toss with the pasta and serve with freshly grated parmesan cheese.
