This meal comes together super fast! The flavors are reminiscent of a typical stirfry, so don’t forget to serve it atop a bowl of freshly steamed rice. Additional veggies can be added, just account for different veggie cooking times.

INGREDIENTS
3 Chicken breast, sliced in 2” piecesAbout a generous 2 cups worth
2 tbsp Soy sauce
2 tbsp Corn starch
2 tbsp Oyster sauceSubstitute; 1 tbsp soy sauce + 1 tbsp Worcestershire sauce + 1 tsp sugar or 2 tbsp hoison sauce
4 tbsp Water
½ tsp Sesame oil
⅛ tsp Black pepper About 4 dashes/shakes
2 tbsp White wineSubstitute: chicken broth or water
1 tsp Sugar
1 Piece of ginger, about 1” coarsely chopped
2 cups Bok choy, chopped in 2” piecesAbout 2 bunches
Oil for cooking- about 4 tbsps
DIRECTIONS
1Mix together chicken pieces with soy sauce and cornstarch. Allow to marinate for about 10 minutes.
2Meanwhile, in a bowl mix together sauce ingredients, oyster sauce, water, sesame oil, pepper, wine and sugar.
3Heat a swirl of oil (about 2 tbsp) in a large skillet over medium-high heat.
Add marinated chicken to skillet and sauté until pieces are slightly browned and scoop into bowl. The pieces don’t have to be cooked all the way through, removing them from heat seals in the juices.
4In the same skillet, lower heat and add ginger pieces. Lightly sauté pieces. About 1-2 minutes.
Increase heat to medium-high and add chicken pieces back to skillet, along with Bok choy. Sauté for 2-3 minutes and then add sauce. Continue to cook until sauce has heated through and slightly reduced.
