Roast Cornish Hens

Because Cornish hens are so small, they don’t take long to cook in the oven! It’s a kind of “set it and forget it” dinner.

RUB: A simple mixture of olive oil and herbs flavor the skin. Use whatever herbs you like (or have on hand).

VEGGIES: Add more veggies like butternut, acorn, or zucchini squash! Arrange the veggies around the hens and once cooked, remove the hens and stir the veggies into all of the delicious juices for extra flavor!

Herb-y Quinoa Cakes with Bell Pepper

Made with a mixture of cooked quinoa and herbs, these cakes can be made bite-size as an appetizer or larger for a sandwich. Tastes great with a chipotle mayo or a tangy blue cheese dressing.

Because of how slightly-nutty tasting quinoa is, this recipe works well with substitute spices and herbs. Make sure to include a layer of crunch, like the bell pepper or diced radish. A welcomed texture to the soft grain.
The prep time includes the cooked quinoa ( if you already have a cup and half of cooked quinoa, you can skip this step).

Shredded Pork Shoulder Roast, IP style

This pork-shoulder recipe is Instant Pot Style!! Lot of citrus flavors, which it seems most recipes use for pork, but the cooking is a fraction of the time.

If you can let the meat marinate overnight, great! At the same time, we know the IP helps with a squashing of flavors into whatever it cooks, so if your pressed on time, the flavors will still be present.
The pressure cooking time is 30 minutes with a natural release. This is about 15 additional or so minutes.

You can broil the shredded meat to crisp the pieces, along with a splash of the cooking liquid, as an option.

Serve as a taco with pineapple salsa and sliced avocado. A quesadilla filling? Or as a shredded pork sandwich on a toasted bun with pickles and spicy mayo. Or even atop a fresh green salad with crispy tortillas strips.

Pineapple Salsa

Ppppeeerrrfect for carnitas or pernil. Equally great on chicken tacos or grilled fish. The recipe is super simple and can be kicked up a notch in a couple ways, depending on your tastes.
For instance the pineapple slices could be grilled before chopped for the salsa for a charred flavor. And the heat is dependent on your peppers- you can scale up or down the level of spiciness to your liking.
Mix together at least 20 minutes prior to serving, and then taste again to see if any adjustments need to be made.
