Snow! Snow! Snow! After all that shoveling and sledding, we all need a warm chocolate fix!!
This is the simplest chocolate dessert…incredibly moist, easy, and the best single-serving dessert out there (to share or not to share)! This makes enough for one large mug.
Note: Please use a fairly large mug. It needs to be big enough so that the cake can rise without creating a “volcano lava” pour all over your microwave.

There’s a current internet following for this super easy pasta dish because it comes together with minimal effort but all the flavors! Most videos have shown how you can roast the tomatoes and feta with lots of olive oil, at 400 for about 40 minutes or until the tomatoes burst and the feta browns. The pasta is cooked according to package directions and everything gets mixed together.
This is the instant pot version!
You can change out the herbs and seasonings, according to your liking. This pasta would be delicious with grilled chicken or even a nice piece of fish.

If you love ginger this recipe is for you! The marinade comes together super fast with the help of a blender and minimal prep, and yes! you leave the peels on ginger and orange. You can marinade chicken overnight, or minimally for an hour.
Serve with a roasted green veggie side or steamed rice.

This stir fry comes together super quick, and if you had all the ingredients prepped prior to cooking, you could have dinner on the table in about 15 minutes!
The coconut oil adds great flavor, but if your missing that from your pantry use a neutral oil, like canola or veggie. Or butter would make it creamy and rich, but still curry flavor forward.
