Homemade Fluffy Pancakes

Pancakes from scratch? Yes, this takes more time than the premixed box. However, it only takes 5 ingredients, is extremely fluffy, and it is almost fool proof, and it’s much tastier, in my opinion!
If needed, the ingredients can be doubled or tripled, etc.

Easy Baked Cod

Super easy baked cod with lemon, olive oil, salt and paprika or cayenne pepper. This simple and healthy recipe is so easy and calls for 4 seasonings and takes only 5 minutes prep time. It’s a great dinner idea for those busy midweek meeting nights!

Homemade Falafel

Falafel (pronounced fa-law-ful) is a middle eastern fried-chickpea patty. These are delicious and pantry FRIENDLY (give or take a spice)! Serve with hummus, or a tomato and cucumber salad, or as a falafel pita sandwich.

The key is using dried chickpeas not canned. Because the canned chickpeas contain to much liquid. So, this does require a soaking time, overnight or preferably 2 days. But after that everything comes together fairly quick. Especially if you have a food processor. A blender can be used, but it’ll have to done in batches to avoid over processing, which will result in hummus.

Also, these are fried, but you could bake them in a 400 degree oven. Lightly oil the baking sheet and drizzle oil over patties. Bake them for about 20 minutes, until golden.

Chicken + Apricots + Candied Walnuts

This chicken dish is a show stopper. In one bite you’ll get a sweet-savory-crunchy-burst of flavor. The steps may seem cumbersome, but after you taste the finished dish….you’ll not raise an eyebrow.
Check out the instructions for adequate timing…this will serve 4-6.
Serve over steamed kale, it lends a simple slate to the flavor melody. Or simply with a large spoon to scoop up the broth.

Crepes (Aka “Pancakes”)

Winter time is pancake time….apologies to my friends from France…in Southern Africa we call crepes “pancakes”, and pancakes we call “flap jacks”. Also we roll them up, as opposed to the beautiful French folds.
What really matters is that these are soo easy to make and they will help you forget the cold outside! This batter recipe can easily be doubled so you can make some now, and keep it in the fridge for the next day too. This makes 10 – 12 pancakes depending on the size of your pan.

Another-Banana Bread Recipe

Yup…another banana bread recipe!
Use up those extra ripe bananas. In fact, maybe your not in the mood to make banana bread but the bananas have already ripen? Peel and place in a ziploc and freeze. Make sure to label the bag, the amount of bananas and date. Before the freezer vortex takes over and they become another mystery bag in your freezer.
This makes about two loaf pans, or one Bundt cake. Also could make about 12 muffins. (There was a lot of ripe bananas in the pantry)
You can reduce for a smaller batch, but baking time will need to be adjusted.

Buffalo Chicken Dip- Pantry Style

What makes a great dip? This one ticks off the boxes for a gooey, spicy, cheesy goodness dip. Serve with chips, veggies or crackers. Are maybe a buffalo chicken sandwich? Pizza? Why not?

Roasted Mediterranean Vegetable Soup

This soup is bursting with flavors from six different veggies. Roasting the vegetables makes a huge difference, not only with flavor, but also allows the skin to be removed from the bell peppers, tomatoes and eggplant. Removing the skins results in a smoother texture. Be sure to season to your taste. The nice thing about soups, is the measurements are suggestions, and can be added to, especially at the end after all the elements meld together to suit your taste presences.

Serve this with your favorite sandwich or a large piece of hearty bread slathered in butter.
