These Chicken and Dumplings are like a warm blanket on a cold rainy night. Soothing and cozy, a perfect hearty meal to dive into.
The “dumplings” are like thick noodles, and can be cut in any preferred length.
Of course this recipe is using the Instant Pot, but could be altered to be stove top, just add more time to cook the chicken and dumplings through.

Serves hearty portions to 4-6.

Green Bean Casserole + Almond & Panko Topping

All the makings of a great side dish. Crisp veggies, creamy sauce and a desired crunchy topping.

“Par-boil*” the green beans, locking in the bright green color and crisp texture.
*submerge green beans in boiling water for about 3 minutes and then place beans in a bowl of ice water- stopping the cooking. Drain beans after 2 minutes.

A great side dish for roasted chicken, turkey or even an oven baked fish. This loves the roasting time in the oven- a labor of love. Plan ahead, or roast and re-heat.

Silky, creamy, and decadent. This chocolate pie takes a little effort, a little time to set in the fridge, but is a delightful luscious treat.

This recipe uses the pre-made pie crust (you can find the freezer section of commissary), simply unroll and bake according to directions.
The pie needs to set up in the fridge for at least 3 hours or up to 24 hours.

Mushroom Stronganoff – IP style

Pasta and shrooms. A winning combination. This recipe can be made vegan, or with dairy, although the dairy-free is so creamy, you wouldn’t believe it’s dairy and cheese free.
Serve as a first course, or as a main with a side salad and a large piece of garlic bread.
This makes enough for 4.

Onion Gravy

Sop up this onion gravy with a hearty piece of sourdough bread or creamy mashed potatoes. Its a guaranteed comfort food when gravy is involved.

This can be made gluten/dairy free and pantry friendly.
It makes about 2 cups of gravy.
