A simple way of making a chocolate mousse in just 15 minutes! This recipe makes enough for 6 servings. Feel free to halve it if you're trying to be good.
PS. At the time of posting, our pantry had an abundance of heavy cream cartons...so for now, this is 100% pantry 🙂

INGREDIENTS
DIRECTIONS
Using your microwave, melt the choc chips with 100ml of cream in a heatproof bowl. This takes about 1 minute. Stir until smooth. Add the tsp vanilla extract and leave to cool about 5 minutes.

Whip the rest of the cream until soft peaks form.
Slowly add the melted chocolate to the whipped cream and continue to whisk on low until firm peaks form.

You can leave it in the bowl or scoop the mousse into individual serving dishes, mason jars, etc.
Refrigerate for at least 2 hours.
