This slaw has finely sliced green apples, cucumbers and peppers all packed together with a tangy vinaigrette!

INGREDIENTS

 2 tbsp VinegarWhite wine or apple cider vinegar
 1 tbsp Sugar
 ½ tbsp Dill, driedIf using fresh, increase to 1 tbsp...basil can be substituted
 ½ tbsp Parsley, driedIf using fresh, increase to 1 tbsp
 1 Cucumber, peeled and julienned
 1 Large green apple, julienned
 2 tbsp Red bell pepper, finely diced
 1 Jalapeño or small poblano pepper, finely diced(This is optional)

DIRECTIONS

Whisk together vinegar, sugar, dill and parsley, until sugar dissolves.

In large bowl, combine cucumber, apple, bell pepper and jalapeño (if using). Add vinegar mixture to bowl and mix together.

Allow flavors to meld for about 20 minutes in the fridge.
