Delicious and easy baked yellow squash or zucchini.

INGREDIENTS
2 Yellow Squash
2 tbsp Olive oil
1 Package of frozen veggies
Mozzarella cheese
Italian seasoning
Salt
Pepper
DIRECTIONS
Prepare yellow squash for baking

Preheat oven to 350 F
Cut the yellow squash lengthwise and remove the seeds.
Brush the cut sides with olive oil and Italian seasoning to the center of the hollowed-out halves
Prepare veggies

Place the veggies, onion and garlic in a large bowl and drizzle with olive oil. Stir until all of the veggies are well coated and then sprinkle with salt and pepper.
Bake

Place yellow squash on a cookie sheet face up and bake in the oven for 10 minutes.
Take out and fill the yellow squash with the veggies, and mozzarella cheese.
Bake for other 20 minutes.
