A traybake is exactly as it sounds, ingredients baked on a tray. This recipe features two options for the tray bakes, one featuring the protein and the second featuring the veggie.
The chicken gets nestled with stale bread, cherry tomatoes and onions. The broccoli rabe gets a generous drizzle of olive oil and salt before being roasted.
Broccoli rabe can have a bitter taste, similar to bitter greens, and the squeezed fresh lemons helps counter that flavor. But to remove more of the bitterness, you could blanch it first (submerge in boiling water for 1-2 minutes and then submerged in ice water to stop the cooking) and then remove any excess water before roasting.
This dinner features multiple flavor profiles, playing to many taste buds, salty, bitter, and sweet.

INGREDIENTS
4 Chicken thighs, skin on“Chicken breast” from the pantry were used, they tend to be very small, like chicken thighs
2 cups Stale bread piecesAny leftover bread can be used here, roughly rip same size pieces
½ White onion, sliced or large dicedAbout 3/4 cup
1 cup Cherry tomatoes, sliced in halfAny tomatoes can be substituted and more or less can be used
1 tsp Paprika
1 tsp Garlic powder
1 tsp Onion powder
1 tsp Dried oregano
3 pinches Salt
Lots of olive oil to drizzle over whole tray
Broccoli Rabe
1 Bunch of broccoli rabe, bottom stems trimmed, and rinsed
Olive oil drizzle and salt
1 Lemon, halved
DIRECTIONS
1Preheat oven to 375 degrees.
2Line a large and small, rimmed baking sheets, with foil.
Place chicken, with skin side up, on prepared baking sheet. In between chicken, scatter bread, onions and tomatoes. Give the whole tray a healthy drizzle of olive oil.
Sprinkle spices, paprika thru oregano, over chicken pieces. Sprinkle the entire tray with salt.

3Place tray in heated oven, roast for 30 minutes.
4Meanwhile, place broccoli rabe in a large bowl and drizzle with olive oil. Toss together. (Unless opting to prepare less bitter- then blanch broccoli rabe first, and follow roasting instructions).
Place oiled veggie on small prepared baking tray.
Sprinkle broccoli rabe with salt.
Place in oven alongside baking chicken tray, at thirty minutes of roasting.

5Roast two trays for another 15-20 minutes, until chicken is crispy and broccoli rabe has wilted and leaves crisped.
6Remove trays from oven.
Squeeze halved lemon over roasted broccoli rabe.
Serve immediately. Make sure to include the roasted bread and tomatoes with the chicken.
