You'd never know there's zucchini in this ultra-moist, rich chocolate cake.

INGREDIENTS

 1 cup flour
 ½ cup cocoa powder
 ¾ tsp baking soda
 ¼ tsp baking powder
 ¼ tsp salt
 ¾ cup semi-sweet chocolate chips
 2 eggs
 ¼ cup vegetable oil (or canola)
 ¼ cup plain greek yogurt
 ½ cup sugar
 1 tsp vanilla extract
 1 ½ cups zucchini, shredded

DIRECTIONS

Preheat the oven to 350° and butter a loaf pan.

Using a cheese grater, shred the zucchini along the long holes.

Mix the flour, cocoa powder, baking soda, baking powder, salt, and chocolate chips in a large mixing bowl.

In a separate bowl, whisk together eggs, oil, yogurt, sugar, and vanilla until smooth.

Mix the wet and dry ingredients, and then use a spatula to fold in the zucchini, making sure that it's evenly spread throughout. Pour the batter into the loaf pan. If wanted, sprinkle some more chocolate chips on top of the batter.

Bake for about 45 minutes, or until an inserted toothpick comes out clean.
