These naturally lacto-fermented carrots are crunchy and tangy. Perfect with a tasty dip like hummus!

INGREDIENTS

 5 medium carrotscut into 1/4
 2 scallionssliced
 2 cloves garlicsmashed
 ½ tsp whole peppercorns
 kosher salt

DIRECTIONS

Add scallions, peppercorns, and garlic to the bottom of a mason jar.

Add carrots vertically so that they fit tightly but not packed in. Extra carrots can be layered on top, if needed. Make sure everything is at least an inch below the top of the jar.

Prepare a 2% salt solution: combine 1/2 tbsp salt with 2 cups cool water. Or, weigh out 500 g of water and add 10 g salt. Stir to combine.

Pour water over carrots until covered by 1/2". Add a fermentation weight, if using, and cover loosely with a lid, or use an airlock.

Allow to ferment at room temperature for 1 week. Thereafter, transfer to refrigerator.
