A tall, refreshing glass of ginger ale is a fantastic drink to enjoy on your balcony and watch the sunset! It is very easy to make. The syrup in this recipe uses a good amount of fresh ginger so there is a lot of zing. Beyond that, it's as simple as boiling water and dissolving sugar, so this is something anyone can do.

Once you have the syrup, all you have to do is add cold club soda, and your ginger ale is ready. This recipe is a great springboard for so many beverages both alcoholic and nonalcoholic.

Makes about 1 1/2 cups syrup (enough for 4 to 6 drinks)

INGREDIENTS

 1.50 cups Ginger, peeled and chopped (about 7 oz)
 2 cups Water, cold
 ¾ cup Sugar
 Club Soda, Seltzer, Cold Water
 3 tbsp Fresh Lime or Lemon Juice
 Lime or Lemon Slices for serving
 Ice

DIRECTIONS

Make syrup:

Cook ginger in water in a small saucepan at a low simmer, partially covered, 45 minutes. Remove from heat and let steep, covered, 20 minutes.

Strain mixture through a sieve into a bowl, discard the ginger. Return liquid to saucepan and add sugar and a pinch of salt, then heat over medium heat, stirring, until sugar has dissolved.

Chill syrup in a covered jar until cold.

Assemble drinks:

Mix ginger syrup with club soda or seltzer or cold water and lime juice (start with 1/4 cup syrup and 1 1/2 teaspoons lime juice per 3/4 cup seltzer, then adjust to taste).

Ginger syrup keeps, chilled in the fridge for 1 week.
