Savory sweet potato and tofu scramble. Serves 4

INGREDIENTS

Sweet potato filling
 2 Large Sweet potatoes
 0.25 cup PeasFrozen or fresh
 0.50 tsp Turmeric
 0.50 tsp Cumin
Tofu scramble
 14 oz Tofu
 1 Red onion
 1 tsp Turmeric
 1 tsp Garlic powder
 1 tsp Nutritional yeast
 Salt & pepper to taste
Wrap
 4 Large tortillas or serve in a bowl or mix up a quick naan dough
Toppings
 0.50 Bell pepper
 Sriracha
 Avocado

Peel and chop potatoes into 3/4 in. cubes. Steam or boil them.

Meanwhile chop the red onion and toss in fry pan with 1tsp oil (I used coconut), cook till lightly browned then crumble tofu in, add turmeric, garlic powder, nutritional yeast*, salt and pepper to taste cook 3-5 mins, then put in bowl.

*If you don't have nutritional yeast try a little chili powder.

Next, put the softened sweet potatoes in the fry pan with 1 tsp oil, mash and stir for 3 min then add the peas, turmeric, cumin, salt and pepper to taste. Cook & stir 3 mins then move to bowl.

At this point you can make a wrap or put it up in the fridge for breakfast later in the week.

Ready to wrap? Warm the tortilla in fry pan, add sweet potatoes filling and tofu scramble, add slices of bell pepper, avocado (optional), sriracha, really whatever you want. Fold shut and grill both sides.
