Black-eyed peas are a great source for protein and fiber. (Plus folate, copper, thiamine and iron).
Ok, logistics out of the way…now on to a very simple recipe!
The recipe calls for cooked black-eyed peas- if your using dried; soak 2 cups of beans overnight in about 8 cups of water.
Rinse and drain. Cook in pressure cooker (instant pot) with 4 cups of water for 30 minutes.
Recipe prep doesn’t include cooking beans….
This recipe will serve about 4 as a side.

INGREDIENTS

 4 cups Cooked black eyed peasAny beans would work as a substitute
 1 Celery stalk, diced
 ½ cup White onion, diced
 1 Carrot, diced (optional)About 1/4 cup
 ¼ cup BBQ sauce
 1 tsp Mustard
 ½ cup Water, or brothMore can be use
 ½ cup Green bell pepper, diced
 3 tbsp Bacon fat, or canola oil or olive oliveBacon fat: cook about 4 pieces in oven or in skillet and pour oil off into separate container. Bacon can be crumbled on top of beans.

DIRECTIONS

Heat bacon fat/oil in a medium pan or large skillet.

Sauté celery, onions and carrots (if using). Cook until onions are translucent.

Add beans, along with bbq sauce, mustard and water. Allow to simmer together for about 15 minutes. Throughly heating.
Add green peppers. Stir together.

Serve alongside your favorite brat, hotdog or even roasted chicken.
