Yes this is another banana bread recipe...but with so many wonderfully ripe bananas in the pantry every week...and perhaps you have sourdough starter "discard" that you'd like to use...then this easy banana bread recipe is a happy combination of both situations!

INGREDIENTS

 2 cups All Purpose Flour (240gr)
 ½ tsp Baking Soda
 ½ cup Vegetable Oil
 ½ cup Brown Sugar
 2 Eggs
 ¾ cup Sourdough Starter Discard (125 gr)
 3 Bananas, very ripe, mashed
 1 tsp Vanilla Extract
 ½ cup Chocolate Chips

DIRECTIONS

Preheat oven to 350 degrees F. Coat a loaf pan with cooking spray and set aside, or line with parchment paper.

In a medium-size mixing bowl, combine flour, baking soda and salt.

In a separate mixing bowl (or stand mixer) beat oil and sugar until well combined. Beat in eggs, sourdough starter discard, bananas and vanilla.

Gradually beat in flour mixture, scraping down sides of bowl as necessary. Fold in chocolate chips.

Pour batter into prepared pan. Bake for 50 minutes or until wooden pick inserted in center comes out mostly clean. Add an additional 5 mins if needed. Be careful not to overbake.

Let cool in pan 10 minutes then remove to wire rack to cool completely.
