A sip of Summer! This is a fruit-infused simple syrup that can be used for pancakes, added to Seltzer water for a refreshing drink.

Prep Time5 minsCook Time25 minsTotal Time30 mins

INGREDIENTS

1.50 cups Strawberries (8oz fresh or frozen)
1 cup Sugar(can be reduced to 3/4 cup of sugar)
 1 cup Water

DIRECTIONS

1

Rinse, hull and rough chop the strawberries.

2

In a small pot, heat strawberries, sugar and water until boiling (it's a bit like making jam). Stir occasionally until the sugar is dissolved.

Bring to the boil and then turn heat down to medium and allow to simmer for 15 minutes; mixture will reduce and thicken slightly.

Allow to cool 10 minutes.

3

Using a fine sieve or mesh strainer, strain the mixture into a small bowl or glass jar.

Tip: You can save the cooked strawberries to add to yogurt or put on pancakes.

4

Chill the strawberry simple syrup in the fridge for an hour or two until cold.
