A sip of Summer! This is a fruit-infused simple syrup that can be used for pancakes, added to Seltzer water for a refreshing drink.

INGREDIENTS
1.50 cups Strawberries (8oz fresh or frozen)
1 cup Sugar(can be reduced to 3/4 cup of sugar)
1 cup Water
DIRECTIONS
1Rinse, hull and rough chop the strawberries.
2In a small pot, heat strawberries, sugar and water until boiling (it's a bit like making jam). Stir occasionally until the sugar is dissolved.
Bring to the boil and then turn heat down to medium and allow to simmer for 15 minutes; mixture will reduce and thicken slightly.
Allow to cool 10 minutes.

3Using a fine sieve or mesh strainer, strain the mixture into a small bowl or glass jar.
Tip: You can save the cooked strawberries to add to yogurt or put on pancakes.

4Chill the strawberry simple syrup in the fridge for an hour or two until cold.
Drink options:
5This is a very sweet, thick syrup
1. Add a few tablespoons to a large glass of seltzer water with ice, fresh basil or mint leaves (optional)
2. Add to Strawberry iced tea
3. Add to a cocktail like a Strawberry Gin Smash, or a Strawberry Basil Margarita
