Ok, there are a million sweet potato fry recipes. Well maybe hundreds. Or maybe just like fifty. And here’s another one.
Sweet potatoes are tricky to turn into fries. Sometimes when simply roasted they are mushy or even limp. What’s the trick to crispy sweet potatoes frIes? They need an added starchy coating to help. This recipe uses cassava flour and then fries them in oil, but corn starch, or potato starch can be used. Also if your trying to avoid frying in oil, you can roasted them in the oven, just factor a time difference for achieving true crispness.

INGREDIENTS

 4 Sweet potatoes
 ½ cup Cassava flourSubstitute cornstarch, potato starch, or flour
  cup Oil
 Favorite dipping sauce

DIRECTIONS

Heat about 4 cups of water in medium-large pot.
Wash sweet potatoes under cold water.
Boil until fork tender (easily pierced with a fork).
Remove from water and allow to cool.

Peel skin from potatoes, and cut into wedges.
Heat oil in heavy duty skillet over medium high heat.

In shallow bowl add flour and dredge pieces of potatoes, covering all sides.

Carefully add potatoes to hot oil.

Fry until golden on all sides.

Serve ‘em up hot with a great dipping sauce. Or alongside your favorite burger or chicken. Enjoy!
