Marinate this chicken the night before and throw it on the grill! Let the lime and honey flavors blend together with the smoky grill flavor ....
This chicken is a great main course for summer or a topper for a summer salad. Save the leftovers (if there are any) for a super simple lunch wrap.
Of note; avoid “over-marinating” the chicken with the acid of lime...it’ll cook it like a ceviche, so try not to leave meat in liquid for more than 12 hours...

Mixed together dressing. In a large gallon ziploc or large glass bowl, add marinade to chicken pieces.
Marinate in the fridge for 2-12 hours.
When your ready to grill, allow the meat to come to room temp....this helps not to be a temp shock when you throw it on the hot grill. The meat will have gotten optimal marinade.
Prep your grill. Medium-high heat.
Shake excess marinade off chicken and place on grill. Cook pieces, (depending on size) about 7-10 minutes each side.
Allow a rest time, and serve with salad, fruit pieces with mint, or! 2020’s potato salad!!
