For the 2022 heatwave, stay cool and hydrated with a refreshing Watermelon Mocktail with fresh mint or basil and lime!

3 cups Watermelon cubed (and chilled if you have time)
¼ cup Lime juice (about 2 or 3 limes juiced)
2 cups Seltzer, soda water
8 Mint or Basil leaves
1Cube watermelon. Remove any seeds.
2Slice four thin rounds from your limes. Set aside to be used for garnish. Juice the rest of the two limes.
3Combine the cubed watermelon, lime juice and a few basil or mint leaves in a blender. Blend until smooth
4Using a sieve, strain the watermelon and lime mixture until you're left with just the juice. Set aside.
5Place 5 mint/basil leaves at the bottom of each glass. Use a muddler to release the flavor of the mint.
6Fill cups with ice. Pour watermelon juice halfway full. Top with seltzer/club soda until full. Gently stir with a spoon.
7Garnish each glass with a thin slice of watermelon, a sprig of mint, and reserved lime wedge.
