INGREDIENTS
½ cup Cottage cheese
6 Eggs
1 cup Water or milk
Salt and pepper
Combinations; Roasted bell peppers, cooked onions, jalapeƱos, cheese, bacon, sausage Options are endless. Chop ingredients finely, and cook meat before adding.
DIRECTIONS
2In a large bowl add cottage cheese, eggs and water together. Using a hand mixer blend together on low for 3-5minutes, chopping up the cottage cheese. Add a pinch of salt and pepper while mixing.
3Prepare a water bath, a large casserole dish add water to fill about a quarter of the way.
4The best results have been from glass jars, or ramekins, sprayed with cooking oil.
Insert jars to water bath. Water should be to top of jar, or ramekin. Place in heated oven.

5If choosing to use a muffin tin; the only difference, were more dense and had crispy edges.

7Remove egg dishes and allow to cool.
