This creamy dressing can be used in a variety of ways, stirred over corn and bean salad, grain bowls, grilled veggies, and salad.
Makes about 2 cups of dressing.

INGREDIENTS
1 Avocado
¾ cup Water
¼ cup Olive oil
½ Lemon squeezed, about 3 tbsp
1 Small garlic clove
½ tsp Salt, and to taste
1 tbsp Dried Dill, optional Parsley, thyme, fennel can be substituted.
Fresh pepper to taste
DIRECTIONS

Blend all ingredients together. Taste and adjust with salt or more lemon juice.
If dressing needs to be thinned add water, by tablespoon at a time.
