Using pantry ingredients, make and eat this cake as-is for breakfast. For a snack in the afternoon, add a simple dusting of powdered sugar over the top to dress it up, or for dessert add a scoop of ice cream.

  cup Olive Oil
  cup Maple Syrup
 3 Eggs
 1 ¼ cups Flour(Can use gluten free flour)
 1 tsp Vanilla extract
 1 tsp Baking Powder
 3 Bananas, sliced
 Powdered Sugar for dusting (optional)

Preheat oven to 350F.
Line an 8 inch square or round baking pan with parchment paper.

In a large bowl, whisk together the olive oil, maple syrup, and eggs until smooth.

Stir in vanilla, flour, baking powder and banana slices

Pour batter into prepared pan. Bake until golden brown - about 45 minutes.

Allow to cool at least 10 mins in the pan before serving.

Dust with powdered sugar (optional)
