Wanna spotlight that fantastic baguette? Maybe, it’s homemade or your friendly neighbor shared with you. Toasting slices create a perfect canvas for a tangy, juicy tomato bruschetta. You can serve atop sliced pieces of steak or fresh ahi tuna.

Tomato bruschetta, is a simple combination of tomato, onions and herbs. Dressed with a light drizzle of vinegar and oil. For starters. You can adapt and add other ingredients depending on your preference.

This recipe is for about 5 baguette slices, or about 2 cups of bruschetta.

INGREDIENTS

 1 Large tomato, dicedAbout 1 1/2 cups
 ½ cup Red onion, diced 1/2 of a small red onion
 2 tbsp Red wine vinegar
 2 tbsp Olive oil
 2 pinches Kosher salt
 1 pinch Black pepper
 ¼ tsp Parsley, dried
 Optional; garlic clove, fresh basil, fresh parsley, fresh mint.
 Olive oil, salt and pepper for taste
 5 Sliced baguette pieces, toasted Optional toasting; bake at 400 for about 7-10 minutes.
 Sliced pieces of steak or tuna to serve atop

DIRECTIONS

Mix together all ingredients, tomato through parsley. Stir and set aside.

Top each piece of baguette with bruschetta and pieces of steak or tuna.

Optional; rub halved garlic clove on bread slices. Also, add preferred herbs (basil, parsley or mint) to bruschetta mix.
