When you need a protein packed pancake...this simple and delicious savory egg and cheese pancake is the answer. It’s a very basic recipe focusing on simply the eggs and cheese. This makes enough for 2 people. Serve it with bacon, hash browns, fresh fruit.

INGREDIENTS
4 Eggs
½ tsp Salt
¼ tsp Onion powder
1 tsp Baking powder
½ cup Flour Gluten free flour works very well too
1.50 cups Cheese, shreddedSharp cheddar, Pepper Jack, Mozzarella or a mix of cheese
Sour cream
Optional add ins
1/4 tsp Paprika, Red Chili Flakes, Italian Seasoning
Bacon, crumbled
Scallions or fresh Basil
DIRECTIONS

In a mixing bowl, whisk together eggs, salt, onion powder, and pepper.

Whisk in flour and baking powder until all lumps are gone.

Stir in cheese.

Heat butter in frying pan or griddle on med/high heat.

Add the pancake mix

Lightly brown pancakes on both sides, just as you would regular pancakes, flipping once.
