A fine dining dish made right from your home kitchen! The peas are fresh, savory and pair exceptionally well with the briny sweet scallops. Once you've master this recipe, try it with a crab cake, or even piece of trout.

INGREDIENTS
16 oz Frozen peasOr 4 cups fresh peas
¼ cup Water
4 tbsp Butter
2 Bacon pieces, cooked and crumbled
2 Garlic cloves, thinly sliced
Lemon, chopped cilantro Alternative; chile flakes and chile oil
Pea Purée;
DIRECTIONS
1Heat a small saucepan over med-low heat. Add water, peas and 3 tbsp butter. Cook for 7-10 minutes, until all peas are heated through.

2Using a blender or hand immersion blender, blend cooked peas into purée. Additional water can be added, slowly to get desired texture. Season with salt and pepper to taste.
If using blender, take caution since the liquid will be hot. Use a dish towel over the slightly ajar lid when blending.
Keep purée warm while cooking scallops.

Scallops;
3Add 2 tbsp of olive oil in a non stick skillet and heat over high heat. Add bacon and garlic. Fry for 30 seconds. Garlic should be brown and bacon heated. Remove, leaving flavored oil in skillet.

4Plate bacon crisps and fried garlic. Sprinkle chopped cilantro and a squeeze of lemon. Chile oil and pepper flakes can be substituted for lemon and cilantro.
Mash can be a great compliment to any fish or seafood.
