Fresh herbs combined with zesty lemon, nuts, and nutritional yeast quickly come together for an easy recipe. The mixture can be kept in the fridge for up to a week.
This recipe will make 1/2 cup of pesto. A good amount for about 2-4 oz of pasta.

INGREDIENTS
1 cup Basil and mint leaves
½ Lemon, juiced
¼ cup AlmondsWalnuts, pine nuts, or pepitas can be used
1 Garlic clove
½ cup Oil
1 tbsp Nutritional yeastYou can use parmesan cheese if you don’t need it dairyfree
Salt
DIRECTIONS

Combine all ingredients in a blender and purée until desired texture. Add salt to taste.
If the constancy seems to thick, add more fresh lemon or oil.
