This pulled pork gets juicy flavors from a surprising ingredient in the overnight brine, and a low and slow cooking time.
After roasting and shredding this pork, use it for a perfect BBQ sandwich or carnitas tacos (check out the Fishkill Carnitas recipe to follow).
You can use the oven (instructions to follow) but an instant pot or crockpot can be substituted. Adjust time and temps accordingly.

INGREDIENTS

 1 Can of orange soda- such as Sanpellegrino blood orange or clementinaSubstitute with a sugary orange liquid ... squeeze a few oranges, or other citrus and sugar
 3 tbsp Kosher salt
 3 lbs Pork loinThis is typical size/cut found in the pantry
 Favorite dry Spice rub, like Trader Joe’s Coffee & Garlic This step is optional, depending on how shredded pork will be used

Prep the pork. Pierce it multiple times, either with a skewer or knife.
In a large ziploc bag add orange soda, kosher salt and pork. Brine overnight.

Heat oven to 275 degrees. In a heavy duty pot with lid, if possible add a trivet to inside of pot. If you don’t have one, you can coil up foil in a circle. This allows some of the heat to circulate around the meat as it cooks.
Rub meat with dry rub if using, and place on top of trivet. Add to bottom of pot about half of the soda/salt marinade.

Optional Step: dry rub. Sprinkle over meat on all sides. You could opt to use a simple powdered garlic+chile powder+salt+pepper rub, or your personal favorite.

Roast pork low and slow...until internal temp reaches at least 150 degrees, up 200 degrees. This can take about 3-4 hours in the oven at a temp of 275 degrees.

Remove from oven and allow to rest. Shred pork in pot with cooking liquid to add extra juiciness.

If pork is for bbq sandwiches, heat your favorite sauce and add meat to sauce. Allow flavors to combine before serving on a fresh bun and pickles and a side of coleslaw!
