This fish recipe is a simple secret. Full of tomatoes and mushrooms! It's a great dinner when you're in a hurry. It all goes into one pan and simmers away for loads of flavor. Serve over white or brown rice for a hearty dinner.

INGREDIENTS
3 Tilapia filetsthawed
5 Garlic clovesminced
1 Sweet oniondiced
1 ½ cups Mushroomssliced, about 1 full carton
1 tbsp Butter
3 tbsp Worcestershire sauceSoy sauce can be substituted (account for the additional salt)
2 small Bay leaves (optional)
28 oz Diced tomatoes
DIRECTIONS
1Season the tilapia on both sides with salt and pepper. Set aside.
2In a large saucepan (about 3 inches deep) over medium heat, melt butter and saute mushrooms. Season them with 1/2 teaspoon of salt.

3Then, add diced onions and saute them until translucent.

4Add minced garlic to pan and saute for 1 or 2 minutes. You can add crushed red pepper if you want some heat. Then add Worcestershire sauce.
5Stir in the whole can of diced tomatoes into the pan, along with the 2 bay leaves. Place a lid on the pan and let it simmer for 5 minutes.

6Cut the tilapia filets lengthwise. This makes it easier to fit them in the pan. Now, gently snuggle the filets into the tomatoes. If you need to, gently push down with a spoon so that the fish is covered slightly.

7Cover with the lid and let simmer for 10 minutes on medium heat.

8Serve with rice and enjoy!
