Cod cakes as easy as mashed potatoes!

INGREDIENTS
6 Medium baking potatoes, cut to 1” pieces
2 Large cod filets
2 tbsp Parsley
3 tbsp Butter Optional
¼ cup Milk or half & half, almond milk
¼ tsp Salt Or more to taste
⅛ tsp Black pepper
½ tsp Garlic powder
Sauce
3 tbsp Mayonnaise
¼ tsp Garlic powder
½ tsp Liquid smoke (optional)
¼ tsp Smoked paprika or regular paprika
⅛ tsp Chipotle powder (optional)
¼ cup Parmesan cheese
DIRECTIONS
1In a large heavy bottomed pan, bring 3 qts of water to boil. Add salt to water
2Add diced potatoes to salted boiling water. Set timer for 15 min.
3Add cod filets to boiling water (with potatoes). Set timer for additional 10 min.
4When filets flake easily with a fork, drain potato, cod mixture.
5Return cooked potatoes and cod to saucepan.
6To potatoes and cod add the rest of the ingredients: parsley, salt, pepper, butter, milk, Parmesan cheese
7Mix well with a potato masher or hand mixer.
8Heat skillet to medium-high heat with a bit of oil
9Using approx 1/2 cup to 3/4 cup of mixture, create a party and place in oiled skillet.
10Continue creating patties in skillet.
11Cook patties 3-4 minutes each side or until brown.
Sauce
12Mix all ingredients: mayonnaise, garlic powder, liquid smoke, smoked paprika, chipotle powder and mix well.
13Put a dollop of sauce on each patty and serve hot.
