This easy baked salmon sandwich with zesty lemon mayo and arugula is a fast and delicious lunch idea! Ready in 20 minutes. (Serves 2)

INGREDIENTS
2 pieces Salmon (defrosted)
Olive Oil
Zesty Mayo
¼ cup Mayonnaise
1 tsp Lemon juice
1 tsp Parsley (fresh and chopped finely)
Sandwich prep
2 Italian rolls(See instructions for baking the bread)
Arugula
¼ Cucumber, sliced thin

Preheat oven to 375F. Line a baking sheet with parchment paper for easy clean-up.

Place the salmon on the baking sheet and cover it with olive oil (about a teaspoon should be enough).
Season the fish with salt and pepper. Bake until it's cooked through, depending on thickness of the fish, about 10-15 minutes.

Meanwhile, combine the zesty mayo ingredients and set aside.

Assemble the sandwiches by adding the zesty mayo, arugula, cucumber slices and salmon.
Serve immediately.

1. Thaw rolls for 2 hours
2. Allow to proof for 2 hours
3. Bake 425F for 10 to 15 minutes
